#HappyAccidents is what this can be accurately described as. I was attempting to make something that tasted more like mashed potatoes, but due to cooking the cauliflower too little, I came out with something more like grits. I decided to roll with it instead of cooking it further and I'm so glad I did. This is a winner. Even the non-keto chef in house tried it and loved it. He recommends it.
1 lb minced cauliflower. (Robot Coup is what I did)
1/2 C butter
1/2 C sour cream
1/2 C shredded cheddar
2T fine Parmesan
1 T garlic powder
salt & pepper to taste
Boil cauliflower in salted water until a little tender but not soft, about 3 minutes.
Put back in the pot with remaining ingredients and heat until cheese is melted.
To finish, you can top with Parmesan and broil until cheese is golden brown.
