Fudge is my love. Going keto took that away... for a second! Enjoy!
This recipe will seem weird but it works out.
1/2 C cocoa powder
1 C salted butter
1 C water (If you can have the carbs, use coconut milk)
1 C coconut flour
1/2 C ethyritol
1/2 C shredded coconut
1/2 tsp psyllium
In a small pot, combine cocoa powder with salted butter and cook until butter is totally melted. Set aside. In another pot, boil 1 cup of water, add coconut flour, shredded coconut, psyillium and ethyritol. Reduce until thickened. Add cocoa powder mixture and stir until smooth. Place in a small buttered dish and refrigerate. Alternatively, you could portion in muffin tins, with a 1oz portion scoop or in a chocolate mold. Chill to set.
