1/2 c coconut flour
1/2 c almond flour
1/2 tsp psyllium
4 eggs, separated
1/4 tsp cream of tartar
1/2 tsp cinnamon
1/2 c salted butter, softened
1 tsp baking powder
1/4 tsp salt
1/4 c warm water
Blend flours, psyllium, cinnamon, baking powder and salt. Set aside.
Separate eggs. Whip whites with cream of tartar to medium/firm peaks. Set aside.
Beat butter and egg yolks. Add water and whip until you see a homogenized mixture. Fold in flour mixture then egg whites. Continue folding until all is blended.
Drop onto a hot griddle and sear on medium heat until bubbly. Flip it and cook about 3 more minutes.
To make crepes instead, remove the water from the recipe and replace it with cream cheese. Press batter into thin sheets on parchment and freeze before cooking.
