1.5 C almond flour + 1/2 C coconut flour
6 large eggs, separated
4 T salted butter, melted
1 T baking powder
1/4 tsp cream of tartar
small pinch salt
1/2 c cream cheese
1 tsp psyllium
1/4 c warm water
To make a "whole wheat" variety, instead of coconut flour, use flaxseed meal and also 1/2 c Hemp hearts
In a mixer bowl, whip egg whites with cream of tartar (If you have no cream of tartar, use 1/4 tsp vinegar) and whip to stiff peak.
In another bowl, whip yolks, butter and cream cheese. Slowly add warm water and whip until uniform. Whip in psyllium and beat for about 1 minute. Fold in flours, then egg whites.
If you wish, add 1/2 c sour cream, 1/3 c hemp flour and 1/4 c apple cider vinegar for a sour dough flavor.
If you wish for more of a brioche, add 1/2 c monkfruit or ethyritol.
Bake in unprepped silicone bread pan for 45-50 minutes or until a toothpick can be pulled out clear.
You could make dinner rolls instead by portioning into muffin tins.
You could make this into a recipe for croutons by removing the cream cheese and adding Italian seasoning, garlic and onion salt. Pat the dough onto a sheet tray and bake until stiff (325 for 45 minutes, then remove it from the oven, cut it into cubes and bake to dry.
